Sardinian mutton tartare

utton is often considered a meat of little value, but encapsulates all the flavour and taste of the real Sardinia. In addition to traditional preparations, it stands out best as tartare, thanks to its particularly sweet and delicate flavour and its distinctive digestibility.

Fiore sardo is a cheese made from whole sheep’s milk, and its name comes from the juice of the thistle flower (used to make it curdle), or from the wooden moulds with a flower carved on the bottom that left a veritable brand on the cheese.
