illus is an ancient form of Sardinian pasta prepared by kneading the semolina and eggs by hand for a long time. The pasta is harmoniously combined with the sauce of goat meat flavoured with wild fennel, a rustic herb that grows spontaneously on the coasts, and covered with flakes of salted ricotta.
Sardinian salted ricotta is a variety of ricotta once produced by Sardinian shepherds who, thanks to a process of crushing, salting and drying in the open air, were able to preserve the cheese for many months.
