Sa pompìa is a fruit that exists only in Sardinia: a true rarity that was only recognised by the scientific community in 2015. It is a kind of lemon with a rough, bumpy skin, ugly-looking but fabulous for preparing tasty recipes.
Together with myrtle and lentisk oil, it gives the red prawn carpaccio aromas and flavours that are unique to Sardinia.
